The xarel·lo ferments in stainless steel vats and, after carrying out the malolactic fermentation, it is assembled looking for those base wines that best express the freshness and liveliness that we always seek in this sparkling wine. Balance and elegance, as always, are the key.

After the second fermentation in the bottle, the moment of aging arrives to reach that refreshing fullness that shows the best smile of the xarel·lo.

To achieve this, at least 24 months of rest, silence and calm in our cellars are necessary. So yes, it’s time to uncork it and turn the informal into unforgettable.

The essence of our DNA

Essential Xarel·lo is a tribute to the most distinctive variety of the Penedès, it is the essence of our DNA: it brings together our passion for viticulture, which we have carried in our veins since 1796, and the love affair we have with Xarel·lo, a grape that means so much to us. To make it, we choose the freshest xarel·los that will form part of this sparkling wine on our estates in Espiells and Can Rius and on plots that we select from among our winegrowers, people who, like us, have been linked to the land for decades. With this xarel·lo we show the value of our wine heritage in the Penedès with a wine to match: sincere, honest and close.

Tasting notes

Pale yellow colour with golden sparkles. Fruity character with notes of white flowers and aromatic Mediterranean plants. Hints of fennel and chamomile infused with gently toasted bread and dried fruit stand out. Has a good balance between body and acidity. It is round, serious, fresh and with a certain complexity. It stands out for its meritorious maturity and well-integrated bubbles.


Pairing

An excellent evening and party drink, Essential Xarel·lo is also a chic accessory for an informal meeting, a weekend breakfast or a picnic on the beach when sunset begins. Dare to combine it with a Poke bowl with Scottish salmon, roast beef brioche with apple, basmati rice with seasonal vegetables and raisins.
